1/4 cup baking cocoa |
1 cup water |
1 cup butter, cubed |
2 cups sugar |
2 cups king arthur unbleached all-purpose flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 cup buttermilk |
2 eggs, beaten |
1 teaspoon vanilla extract |
frosting/decorating: |
1/2 cup butter, cubed |
1/4 cup baking cocoa |
1/3 cup milk |
3-1/2 cups confectioners' sugar |
1 teaspoon vanilla extract |
vanilla icing and pastry bag or large tube of vanilla icing |
Directions:
1. In a large saucepan, combine cocoa and water until smooth. Add the butter; bring to a boil. Remove from the heat; cool. 2. In a large bowl, combine the sugar, flour, baking soda and salt. Add cocoa mixture and mix well. Beat in the buttermilk, eggs, and vanilla. Pour into a greased 15-in. x 10-in. x 1-in. baking pan. 3. Bake at 350° for 20-22 minutes or until a toothpick inserted near the center comes out clean. 4. For frosting, in a large saucepan, combine cocoa and milk until smooth; add the butter. Cook over low heat until butter is melted. Remove from the heat; stir in confectioners' sugar and vanilla. Spread over warm cake. Cool. Use vanilla icing to decorate like a diploma. Yield: 20-24 servings. |
