Governor Dalton's Favorite Coconut Bars |

John Dalton was a former governor of Virginia. Eddy, his wife, put together my favorite cookbook as a fundraiser, and this is one of my favorite sweets also. I made a guess as to how many bars. It's not in the recipe and I can't remember. Ingredients:
1 cup flour |
1 1/2 cups brown sugar |
1 teaspoon vanilla |
1/2 teaspoon baking powder |
1/2 cup angel flake coconut |
1/2 cup butter |
2 eggs |
2 tablespoons flour |
1/4 teaspoon salt |
1 cup pecans, chopped |
Directions:
1. Sift flour before measuring. 2. Cream butter with 1/2 cup brown sugar. 3. Add 1 Cup flour. Mix to crumbly mass. 4. Pat it evenly into 9x9 well-greased pan. Bake this pastry until delicately brown at 300°, 20 minute 5. Remove from oven. 6. Beat eggs until light. 7. Add 1 cup brown sugar and vanilla. 8. Mix well. 9. Add 2 teaspoons flour which has been sifted with baking powder and salt. 10. Add coconut and nuts. 11. Spread over pastry and bake at 350°, 25 minute. 12. Cool and cut into bars. |
