Gourmet Spinach Sandwich

I was looking for something relatively healthy and easy to make to make for dinner one night. After searching my fridge and pantry, I came up with this easy and DELICIOUS sandwich! Mozzarella cheese is also a great substitute for the swiss cheese. It goes perfectly with a bowl of soup!
Ingredients:
4 pieces whole wheat bread
2 tablespoons olive oil
course salt and pepper
1 white onion
1 cup sliced mushrooms
3 cups fresh spinach, leafs
4 teaspoons mayonnaise
4 teaspoons dijon mustard
2 slices swiss cheese
Directions:
1. Slice onion end to end to make thick circles. Then cut the circles in half through the middle.
2. Saute onions in olive oil over medium heat for about 3 minutes before adding the mushrooms. Sprinkle with the course salt and pepper.
3. When the onions are translucent, add the spinach. The spinach will cook down. When they start to wilt, add more salt and pepper. When the spinach is completely wilted, take off the stove.
4. Meanwhile, toast the bread in a toaster oven.
5. Spread the mayo and the mustard on the toasted bread slices before adding the slice of swiss cheese.
6. Top bread with the onion mixture and serve hot.
