Don 't let the mayonnaise in this recipe scare you off...these are some of the creamiest eggs I've ever made. The herbs give them a special freshness...from the July/August 2009 Simple and Delcious Ingredients:
8 eggs |
1/4 cup shredded parmesan cheese |
1/4 cup mayonnaise |
1 tablespoon snipped chives |
1 tablespoon minced fresh basil |
1 tablespoon butter |
1 tablespoon minced fresh parsley (optional) |
Directions:
1. In a small bowl, whisk the eggs, Parmesan cheese, mayonnaise, chives and basil. 2. In a large skillet heat butter over medium heat. 3. Add egg mixture; cook and stir until completely set. 4. If desired, sprinkle with parsley and serve hot. |
