This recipe is adapted from . This can be served as a lunch or dinner, or cut up in pieces and used as an appetizer. Ingredients:
1 tablespoon extra virgin olive oil |
1 large onion, sliced into wedges |
1 pear, ripe, cored and sliced |
2 tablespoons balsamic vinegar |
1/2 teaspoon fresh ground black pepper |
8 inches low-carb whole wheat tortillas |
1/2 cup blue cheese, crumbled |
1/4 cup walnuts, chopped |
Directions:
1. Preheat oven to 450°F. 2. Heat oil in non-stick skillet, add onions and saute until softened (7-8 minutes). Add pears and saute for 2 more minutes. 3. Add vinegar and pepper and keep stirring until all liquid is evaporated and onions are covered with a glaze. 4. Divide the mixture between the wraps. Add the cheese and walnuts. 5. Bake for 8-10 minutes or until cheese is melted. |
