Gourmet Mango Salsa

Great with Lime and Honey Glazed Salmon (see my other recipes) or any white fish...experiment with other types of fish! My friend made fish tacos and served this Mango Salsa and her family loved it!
Ingredients:
1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup)
1/2 medium red onion, finely chopped or diced (your preferenece)
2 jalapeƱo peppers, minced (include ribs and seeds for a hotter taste if desired)
jalepeno juice/chipotle pepper sauce/hot pepper sauce, to taste
juice of 2 limes (about 2 tablespoons)
1/2 red bell pepper, diced
2 tablespoons olive oil
1 small cucumber, peeled and diced (about 1 cup)
3 tbsp fresh cilantro leaves, chopped
3 tbsp fresh lime juice
salt to taste
freshly ground pepper, to taste
also good with jicama and/or coarsely diced tomato in small proportions.
i even use white onions if i have no red onions
change these proportions depending on your taste. i overuse cilantro and underuse salt...just my preference.
Directions:
1. Combine all ingredients except for hot pepper sauce (or whatever sauce you've chosen), salt and pepper.
2. Blend thoroughly
3. Add hot sauce of choice
4. Season to taste with salt and pepper.
5. NOTE: If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.
