1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) |

2 jalapeƱo peppers, minced (include ribs and seeds for a hotter taste if desired) |
jalepeno juice/chipotle pepper sauce/hot pepper sauce, to taste |
juice of 2 limes (about 2 tablespoons) |
1/2 red bell pepper, diced |
2 tablespoons olive oil |
1 small cucumber, peeled and diced (about 1 cup) |
3 tbsp fresh cilantro leaves, chopped |
3 tbsp fresh lime juice |
salt to taste |
freshly ground pepper, to taste |
also good with jicama and/or coarsely diced tomato in small proportions. |
i even use white onions if i have no red onions |
change these proportions depending on your taste. i overuse cilantro and underuse salt...just my preference. |
