This recipe comes from a little book called ABC Jiffy Cookery. I've had it for over 50 years. I haven't tried any of the recipes yet. I'm putting them here so I can find them easier. Ingredients:
3/4 cup cheese, grated (parmesan or romano) |
1/2 cup fine breadcrumbs |
1/2 teaspoon salt |
6 thin shoulder lamb chops |
1 whole egg (or 2 egg yolks, beaten) |
Directions:
1. Mix together the cheese, bread crumbs, and salt. Using a pastry brush or spoon, coat the chops on both sides with egg, and dip in the cheese mixture. Arrange on a baking sheet and broil slowly, turning once. When the cheese is melted and crumbs brown, meat should be tender. |
