very good to make in the crock pot Ingredients:
6 medium potatoes |
2 cups cheddar cheese, shredded |
1/4 cup butter |
1 1/2 cups sour cream or 1 1/2 cups milk |
1/3 cup onion, finely chopped |
1 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons butter |
paprika |
Directions:
1. wash and peel potatoes. 2. cut in half and cook until almost soft. 3. shred potatoes coarsely. 4. in saucepan over low heat, combine cheese and 1/4 cup butter. 5. stir until almost melted. 6. remove from heat and blend in sour cream, or milk, onion and seasonings. 7. fold into potatoes and turn into a greased 2 quart casserole dish. 8. dot with butter and sprinkle with paprika. 9. bake for 30 minutes or until heated thoroughly in a 350 degree oven. |
