Gouda Quesadilla With Cilantro-Walnut Pesto |

SO YUMMY! Ingredients:
8 corn tortillas |
2 cups gouda cheese, grated |
1 cup cilantro, chopped and stemms removed |
3/4 cup walnuts, toasted |
2 garlic cloves |
1/4 cup olive oil |
1 teaspoon salt |
1/2 teaspoon pepper |
2 tablespoons lime juice, fresh |
Directions:
1. Place cilantro, walnuts, garlic, salt, pepper, lime juice, and olive oil in a food processor and blend until smooth. 2. Fill each corn tortilla with 1/4 cup shredded gouda and fold in half. Cook on a hot grill or grill pan until cheese is melted, about 1-2 minutes per side. 3. Serve with the cilantro pesto. |
