Ingredients:
2 pounds yukon gold potatoes |
2/3 cup crumbled gorgonzola cheese |
1/2 cup half-and-half |
1/4 cup butter |
1/4 cup chopped fresh parsley |
3/4 teaspoon freshly ground pepper |
1/4 teaspoon salt |
1/2 cup chopped toasted walnuts |
Directions:
1. Quarter potatoes; boil in salted water to cover 20 minutes or until tender. Drain potatoes, and coarsely mash with Gorgonzola cheese, half-and-half, butter, chopped fresh parsley, freshly ground pepper, and salt. Sprinkle with chopped toasted walnuts. |
