Gorgonzola Porcupine Cheese Ball

These cheese balls are really fun to make and serve. Great with my Gazpacho. Please note, cooking time is chilling time.
Ingredients:
4 tablespoons unsalted butter
14 ounces gorgonzola
3 garlic cloves, peeled and pressed
2 tablespoons extra virgin olive oil
1 lemon, juice and zest of
1/4 teaspoon white pepper
12 large celery ribs, washed and dried
1 (6 ounce) bottle of small cocktail onions
Directions:
1. Place the Gorgonzola in a medium sized bowl.
2. Melt the butter.
3. Add the melted butter to the Gorgonzola and mix well.
4. Press in the garlic, add the olive oil, lemon zest and juice, white pepper and stir until thick.
5. Form the mixture into two balls.
6. Wrap each ball in plastic wrap and chill for two hours.
7. Cut the celery into 3 inch long by 1/4 inch thick sticks (you want to make sure your sticks are cut thin enough that cocktail onions will fit onto them).
8. Drain the Cocktail Onions.
9. Press the Cocktail Onions down on top of the celery sticks.
10. Unwrap the cheese and arrange side by side on a nice, oblong serving platter.
11. Press the celery sticks into the cheese ball so that they look like porcupine quills, with a little snow on top -.
12. Enjoy!
