Ingredients:
6 ripe pears |
1/2 cup lemon juice, divided |
3 cups sugar |
3 cups water |
4 ounces gorgonzola cheese |
1/2 cup unsalted butter, softened |
Directions:
1. Peel pears; remove core from bottom, leaving stem intact. Slice 1/4 inch from bottom of each pear, and brush pears with 1/4 cup lemon juice. 2. Combine sugar, water, and remaining lemon juice in a Dutch oven; bring to a boil. Place pears upright in Dutch oven; spoon syrup over pears. Reduce heat; cover and simmer 15 minutes or until tender. Let pears cool in syrup. 3. Combine cheese and butter; beat well. Fill pears with cheese mixture; chill. Cut in 1/2-inch thick slices to serve. |
