Gorgonzola Grilled Potatoes |

A nice change to baked potatoes. Cook them right on the grill with the steak! Ingredients:
1 stick butter, softened |
4-6oz gorgonzola cheese |
2 cloves chopped garlic |
1t fresh parsley, chopped |
salt and pepper |
2 sweet onions, thinly sliced |
4 baking potatoes, cut lengthwise 3/4 of the way through |
Directions:
1. Place each potato on square of heavy aluminum foil large enough to completely wrap potato in for cooking. 2. Combine butter, cheese, garlic, parsley, and salt and pepper until mixed. 3. Spread mixture evenly over both sides of all potatoes. 4. Fill each potato with onion slices. 5. Close each potato and wrap tightly in aluminum foil, making sure to pinch seams to tightly close packet. 6. Grill using indirect heat for about an hour, turning every 15 minutes. 7. Let rest off heat for about 10 minutes. 8. *WARNING* Open foil packets CAREFULLY even after resting. |
