This dip is best served with raw vegetables cut into thick strips, such as fennel, peppers, carrots and celery, or with slices of toasted bread. Ingredients:
3 tbsp. extra-virgin olive oil |
6 oz. gorgonzola |
3 tbsp. mascarpone |
1 lemon, juice only |
salt and freshly ground pepper |
* if necessary, replace the mascarpone with cream cheese |
Directions:
1. In a food processor combine the olive oil, Gorgonzola, mascarpone 2. and lemon juice. Season with salt and pepper and 3. pulse until smooth and creamy. 4. Transfer the dip to a small serving bowl. |
