This dip is best served with raw vegetables cut into thick strips, such as fennel, peppers, carrots and celery, or with slices of toasted bread.
Ingredients:
3 tbsp. extra-virgin olive oil
6 oz. gorgonzola
3 tbsp. mascarpone
1 lemon, juice only
salt and freshly ground pepper
* if necessary, replace the mascarpone with cream cheese
Directions:
1. In a food processor combine the olive oil, Gorgonzola, mascarpone
2. and lemon juice. Season with salt and pepper and
3. pulse until smooth and creamy.
4. Transfer the dip to a small serving bowl.
