From PassionFish Restaurant, a unique taste sensation with gourmet ingredients like Madeira wine and Gorgonzola and mascapone cheeses. Ingredients:
crust |
1 cup graham cracker crumbs |
2 oz. butter, melted |
cheesecake |
1 lbs. gorgonzola dolce |
1/2 lb. mascarpone |
2 t. flour |
2/3 cup sugar |
3 eggs |
2 cups sugar |
1/2 cup water |
1/2 cup heavy cream or evaporated milk |
1/2 cup madeira wine |
6 fresh figs, halved |
Directions:
1. Preheat oven 350’. 2. Grease a 10” spring-form pan. Combine crust ingredients thoroughly, and press into the bottom of the pan. 3. Bake 10 minutes. Cool completely. 4. Mix the next 5 ingredients (gorgonzola -> eggs) in a mixer until smooth. 5. Pour into pan. 6. Bake (in a water bath) for 1 hour, or until cake is set. Let cool. 7. Caramelize the remaining sugar and water in a sauce pan over medium heat. 8. Slowly stir in the cream and Madeira. 9. Drizzle caramel sauce over cheesecake. 10. Place fig halves around the rim of the serving plate and serve. |
