Gorganzola Stuffed Chicken Breasts Wrapped In Baco...

My husband absolutely loves it when I make him these stuffed chicken breasts. It takes a little to prep but the results are amazing!
Ingredients:
2 boneless, skinless chicken breast halves
1/4 cup gorganzola cheese
2 tablespoons minced shallots
1 clove minced garlic
2 tablespoons minced italian parsley
salt and pepper to taste
4 strips thick sliced applewood smoked bacon
Directions:
1. Pre heat oven to 375 degrees.
2. Wash chicken breasts and pat dry with paper towels.
3. Cut a slit into each half approximately 2 inches long and about 1 to 1 1/2 inches deep.
4. Combine gorgazola, shallots, garlic and parsley in a small bowl. Add salt and pepper to taste.
5. Divide gorganzola mixture in half and stuff in chicken breasts.
6. For each breast, wrap 2 strips of bacon around and secure with toothpicks.
7. Add salt and pepper to taste.
8. Bake at 375 degrees for approximately 45 minutes or until chicken is cooked through.
