This is a family favorite. Years ago we could buy this coffee cake at the local bakery. Finally ... my sister-in-law came up with a copycat recipe. From the kitchen of Debbie Vroom Thornburg, Fairview TN. Ingredients:
1 duncan hines yellow cake mix |
1/2 cup unsalted butter, melted |
2 eggs |
16 -18 ounces cream cheese, softened |
2 eggs |
1 lb powdered sugar, less 2 t |
1/2 cup pecans |
Directions:
1. Mix first 3 ingredients and press into a greased and floured 9x13 pan. Bake at 350 degress for 10 minutes. 2. Blend the cream cheese, eggs, and powdered sugar. When thoroughly blended, spread carefully over still warm crust. Bake another 20 minutes. 3. Remove from oven and sprinkle remaining 2 tablespoons of powdered sugar over the top. Then sprinkle the pecans. Bake another 15 minutes, more or less, until the filling has set. |
