so i just made this last night because it was my dogs birthday. Everyone had seconds. Except my dog, because i wouldnt allow it. This is a nice dense loaf-type cake. Healthy enough too, you can use all wholemeal or all plain flour if you want.
Ingredients:
cake
2 tbsp butter
1/2 cup raw sugar
1 egg
3 ripe bananas, mashed
1/2 cup wholemeal flour
1 cup plain flour
3 tsp baking powder
2 tbsp milk
killer caramel icing
1 tbsp butter
2 tbsp milk
1 tbsp powdered milk
1/4 cup brown sugar
1/8 cup white chocolate melts
1 cup icing sugar (approximately)
Directions:
1. FOR CAKE
2. Preheat oven to 200°C. Line a loaf tin.
3. In a large bowl, use electric beaters to combine the butter and sugar. Add egg and mashed bananas and beat until combined.
4. In another bowl, combine flours and baking powder. Gently fold flour mixture into the banana mixture then add milk and fold to combine.
5. Pour mixture into the loaf pan and bake for about 45 minutes, until a skewer comes out clean.
6. Stand cake in tin for 5 minutes before transferring to a wire rack to cool completely.
7. FOR ICING:
8. Combine butter, milk and milk powder in a small saucepan and heat, stirring, until butter melts. Add in sugar and chocolate and continue to heat and stir until its all smooth. Remove from heat.
9. Place about 1/3 cup icing sugar in a small bowl. Add enough of the saucepan mixture (like a tablespoon or so) to make a smooth paste. Return this mixture to the saucepan and repeat with remaining icing sugar (may need more or less, I didn’t measure) until you have a smooth, spreadable icing.
10. Spread icing over cake when it’s cooled and top with some chopped walnuts.
