Good Old-fashion Southern Pimento Cheese |

Pimento cheese is a staple around the South for sandwiches, stuffed celery, and as a snack on crackers. Ingredients:
8 ounces of medium sharp cheddar cheese, grated - do it yourself and do not use the pre-grated cheese |
6 ounce jar of diced pimentoes with juice (but pick out the seeds) |
mayo - about 3 heaping tablespoons |
black pepper, to taste |
celery seed, 1/4 teaspoon |
dash of hot sauce |
Directions:
1. Grate the cheddar into a large sturdy dish with low sides (so you can easily do the mashing and mixing); 2. Dump the contents of the jar of pimentoes on top of the grated cheese; 3. Using a fork, mash the two ingredients together until very well mixed; 4. Add mayo and mix (add more if it seems dry); 5. Add seasonings - black pepper, celery seed, hot sauce and mix some more; 6. When everything is mixed, transfer to a storage container with a tight lid; it'll keep in the fridge for a couple of days; 7. Now you're ready to stuff lengths of celery as an appetizer, or use as a spread for crackers, or use to make a sandwich! |
