Really simple, quick and great flavored stuffing. Ingredients:
1 loaf brioche, medium dice |
2 carrots, small dice |
1 medium yellow onion, small dice |
3 stalks celery, peeled, and small dice |
1 1/2 c white turnip, small dice |
2 cups shitake mushrooms, stems removed and discarded, small dice |
2 cups chicken stock, hot |
3 sage leaves, minced |
1/4 c parsley, minced |
salt and pepper to taste |
Directions:
1. Spread vegetables not mushrooms on a sheet tray, salt, and roast at 350 degrees for 35 minutes. Stirring around halfway through cooking. 2. In the last 10 minutes of cooking add the brioche. 3. Remove and pour into a large microwave safe bowl. 4. Add mushrooms, herbs, pepper, and the 2 cups of hot chicken stock. 5. Mix thoroughly and microwave on high for 6 minutes. |
