Oatmeal - pretty boring, right? But it's hearty and a great start to the day, so I was really excited when this turned out to be so tasty. Ingredients:
1 tablespoon butter |
1 cup steel cut oats |
3 cups boiling water |
3/4 cup milk + 1/4 cup milk (reserved) |
1 tablespoon brown sugar |
1/4 teaspoon cinnamon |
Directions:
1. In a large saucepan, melt the butter and add the oats. Stir for 2 2. minutes to toast. Add the boiling water and reduce heat to a simmer. 3. Keep at a low simmer for 25 minutes, without stirring. 4. Combine 3/4 cup of milk with the oatmeal. Stir 5. gently to combine and cook for an additional 10 minutes. Spoon into a 6. serving bowl and top with remaining milk, brown sugar, and 7. cinnamon. 8. Sometimes I mix it up with dried or fresh fruit and a touch of maple syrup or a dollop of honey. |
