Good Night Casserole Supper |

An easy and fast casserole...serve with a green salad and your meal is complete. Ingredients:
1 lb lean ground beef |
1 onion, chopped |
1 -2 garlic clove, minced |
1 red pepper, chopped |
1 green pepper, chopped |
1 jalapeno, seeded and chopped small |
2 (10 ounce) cans golden cream of mushroom soup |
4 tablespoons soy sauce |
2/3 cup uncooked white rice |
1 (3 ounce) can french fried onion rings |
3/4 cup water |
salt and pepper |
Directions:
1. Preheat oven to 350 degrees. Brown beef, onion, garlic and jalapenos in a large skillet and drain. 2. Mix the beef mixture, both bell peppers, both cans of soup, rice, soy sauce, and 3/4 cup of water, salt and pepper. (Easy on the salt the soy sauce and soup has plenty) Put into a large casserole dish and cover with foil. 3. Bake for 45 minutes, remove dish from oven and sprinkle onion rings over the top. Return to oven for 15 minutes. |
