This corbread is my favorite, mainly because it is so quick and easy, and NO white flour. Ingredients:
2 cups buttermilk |
2 eggs |
1 teaspoon baking soda |
2 cups yellow cornmeal |
2 teaspoons sugar (optional-i usually forget to add this) |
1 teaspoon salt |
1 tablespoon melted butter |
drop of vanilla extract |
Directions:
1. Beat together the buttermilk, eggs, and baking soda. 2. Beat in the cornmeal, sugar, salt, melted butter and vanilla 3. Pour into a butter baking pan or 2 buttered 9-inch pie pans. 4. Bake at 450 for about 20 minutes 5. Cut and serve piping hot with butter! |
