A hearty, healthy and tasty breakfast for cold winter mornings. I've entered this recipe exactly as I found it, but we prefer steel-cut oats over quick oats. Ingredients:
1 1/2 cups apple juice |
1 (7 ounce) package mixed dried fruit |
1/3 cup packed brown sugar |
1/2 teaspoon ground cinnamon |
2 pears, cored and chopped |
2 1/2 cups water |
2 1/2 cups milk |
1/2 teaspoon salt |
3 cups quick oats |
2 (6 ounce) containers vanilla yogurt |
1 cup granola cereal |
Directions:
1. In a saucepan, combine juice, dried fruit, sugar and cinnamon. Bring to a boil. Reduce heat and simmer, covered, 20 minutes. 2. Add pears; cook, covered, 10 minutes. Cool, drain and discard liquid. 3. Bring water and milk to a boil; add salt and oats. Reduce heat to medium; cook 1 minute; stir. 4. To serve, top each serving of oatmeal with fruit mixture, yogurt and granola. |
