Sweet muffins with fruit and hone. Great for breakfast or brunch. Ingredients:
11/2c flour |
11/2t baking powder |
1t baking soda |
1/2t each salt and ground ginger |
1/2c butter or margarine,softened |
1c. honey |
2 eggs |
1/2 c. 2% milk |
1c each dried,chopped apricots,and chopped walnuts |
Directions:
1. Greas muffin tins or use paper liners. In small bowl,mix flour,baking powder,baking soda,salt and ginger. In large bowl, cream butter with honey until light and fluffy. Beat in eggs and milk. Stir dry ingredients into wet mixture until just moistened. Stir in apricots and walnuts. Pour into muffin cups. Bake at 350 for 25 to 30 mins or until golden brown and toothpick inserted in center comes out clean. Cool on wire racks. |
