This is so easy to make for a lovely muffin for breakfast and it's good for you as well. Ingredients:
1 1/2 cups flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/8 teaspoon ginger |
1/8 teaspoon allspice |
3/4 cup brown sugar |
1 egg |
1/2 cup yogurt |
1/4 cup oil |
1/2 teaspoon vanilla |
1 (7 ounce) can undrained crushed pineapple |
3/4 cup grated carrot |
1/2 cup raisins |
Directions:
1. Preheat oven to 400. 2. Combine dry ingredients in a large bowl. 3. Beat together wet ingredients and pour into dry mixture. 4. Stir just until combined. 5. Fill muffin cups and bake for 15- 17 minutes. |
