Ingredients:
vegetable cooking spray |
1/2 cup chopped onion |
1/2 cup chopped green pepper |
1/2 cup chopped celery |
2 cloves garlic, minced |
1 cup frozen black-eyed peas, thawed |
3/4 cup water |
1/4 cup diced lean cooked ham |
1/2 teaspoon dried marjoram |
1/8 teaspoon salt |
1/8 teaspoon hot sauce |
1 (13 3/4-ounce) can no-salt-added beef broth |
1/2 cup sliced fresh okra |
1/2 cup seeded, chopped tomato |
Directions:
1. Coat a medium saucepan with cooking spray; place over medium-high heat until hot. Add onion and next 3 ingredients; saute until vegetables are tender. Add peas and next 6 ingredients; bring to a boil. Cover, reduce heat, and simmer 20 minutes. Add okra and tomato; cook, uncovered, an additional 20 minutes or until okra is tender. |
