Ingredients:
2 cups cooked black eyed peas
2 cups shredded carrots
1 cup shredded kale
1 cup minced leek
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 tablespoon olive oil
1 teaspoon dried basil
1/2 teaspoon dried sage
1/4 teaspoon dry mustard
Directions:
1. In a large bowl, combine the peas, carrots, kale and leeks.
2. In a small bowl, whisk together the lemon juice, vinegar, oil, basil, sage and mustard. Pour over the peas and toss to combine.
