Super Foods Cookbook Ingredients:
2 cups cooked black eyed peas |
2 cups shredded carrots |
1 cup shredded kale |
1 cup minced leek |
2 tablespoons lemon juice |
2 tablespoons red wine vinegar |
1 tablespoon olive oil |
1 teaspoon dried basil |
1/2 teaspoon dried sage |
1/4 teaspoon dry mustard |
Directions:
1. In a large bowl, combine the peas, carrots, kale and leeks. 2. In a small bowl, whisk together the lemon juice, vinegar, oil, basil, sage and mustard. Pour over the peas and toss to combine. |
