Good for You Turkey Meatballs |

This is a recipe I found in Everyday Food, but I tweaked it a bit. Ingredients:
3 slices whole wheat bread, processed into crumbs |
1/4 cup milk |
1 1/2 lbs ground turkey, preferably dark meat |
3 green onions, finely chopped |
2 small garlic cloves, minced |
2 tablespoons chopped fresh parsley |
1 1/2 teaspoons italian seasoning |
1 large egg |
1 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Preheat oven to 375 degrees. 2. Place bread crumbs into a bowl along with the milk and let stand for 5 minutes. 3. Add remaining ingredients to the bread mixture and combine with a fork until mixed. 4. Roll meat mixture into desired size balls and place on cookie sheet lined with parchment paper. 5. Bake 20 minutes. 6. Use right away or let cool and then store in airtight container in the freezer for future use. 7. I vacuum seal mine for longer storage. |
