Good-For-You Granola Bars |

These bars are full of nutritious foods, including good fats in the flaxseed meal and nuts. I've been experimenting with granola bars after trying Kittencal's delicious Fantastic Granola Bars-trying to find something that tasted that good but was good for you too. This is as close as I have come so far. :) They are still a little crumbly but have good flavor. You can substitute any nut-butter, nuts, seeds, or dried fruit that you have on hand. Omit the salt if you are using salted nuts or seeds. Ingredients:
1/2 cup honey |
1 cup natural-style peanut butter, unsalted |
1/4 cup canola oil |
2 teaspoons vanilla extract |
1 egg |
1 1/2 cups flax seed meal |
2 teaspoons cinnamon |
1/4-1/2 teaspoon salt |
1/2 cup sunflower seeds |
1/2 cup flaked coconut |
1/2 cup raisins |
1/2 cup dried cranberries |
1/2 cup chopped almonds |
1/2 cup chopped pecans |
2 cups old fashioned oats |
Directions:
1. Preheat oven to 350 degrees. 2. Combine honey, peanut butter, oil, vanilla, and egg in large bowl and mix well. 3. Add flaxseed meal, cinnamon, salt and mix well. 4. Add remaining ingredients and mix till it is all combined. 5. Press into a 13x9-inch baking pan that has been sprayed with non-stick cooking spray (or line the pan with foil and spray the foil). 6. Bake for 25-35 minutes, until the edges are beginning to brown. 7. Let cool completely, transfer to cutting board and cut into bars. |
