Haven't tried this yet, it's a healthier adaptation of No-Bowl Fresh Apple-Pecan Cake, which I really loved. I'm hoping this works well. Ingredients:
2 cups chopped apples (tart) |
1/2 cup splenda granular, sugar substitute |
1/4 cup sugar |
1 cup whole wheat flour |
1 teaspoon ground cinnamon |
1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1/2 cup chopped pecans |
1/4 cup cold coffee |
1/4 cup applesauce |
1 large egg |
1 teaspoon vanilla |
Directions:
1. Mix everything together. 2. Bake in a 8x8 or 9x9 pan at 350°F In my oven it takes 25 minutes in a glass 8x8, your oven will likely take a bit longer, mine tends to cook really fast. 3. Serve warm or cold, really good with white or cinnamon icing. |
