Good for You-Breakfast Burritos |

This is a quick, healthier, lower cost choice for breakfast. Ingredients:
12 whole wheat tortillas (fajita size) |
12 ounces lean sausage meat |
18 medium eggs, scrambled |
6 ounces shredded monterey jack cheese |
2 tablespoons dried onion |
2 tablespoons black pepper |
2 tablespoons season salt |
Directions:
1. Cook the sausage and set aside to drain on a paper towel. 2. Scramble eggs, with dried herbs and seasoning. Cook in pammed skillet. 3. Divide eggs, sausage and cheese up in 12 equal portions. 4. Place 1 portion of each (eggs, sausage, and cheese) in a tortilla. Wrap the tortilla up. 5. Wrap the burrito in Saran Wrap. When cool place in the freezer. 6. In mornings to follow pull one of these out and ZAP! in the microwave. A frozen one takes about 2 minutes, one that has had time to defrost is hot in about 45 seconds. Times may vary by microwave. 7.
