Good Cheesecake

This is simple, delicious, and light-not heavy like a lot of cheesecakes. This is one of my husband's absolute favorite desserts. Got this is from my MIL.
Ingredients:
1 1/2 cups graham cracker crumbs (about 24 crackers)
1/4 cup sugar
6 tablespoons butter or 6 tablespoons margarine, melted
1 (3 ounce) package strawberry jell-o gelatin dessert
1 cup boiling water
8 ounces cream cheese, softened
1 (12 ounce) can evaporated milk, chilled
1 cup sugar
1 teaspoon vanilla
Directions:
1. Crust:.
2. Combine graham crumbs and sugar.
3. Stir in butter until crumb mixture is moistened.
4. Reserve 1/4 cup of crumbs for topping, if desired.
5. Press into the bottom of a 9 x 13 pan.
6. If you desire, you can bake it at 350 for 8 to 10 minutes (I prefer it unbaked).
7. Cheesecake:.
8. Dissolve jello in boiling water.
9. Beat in cream cheese.
10. Chill jello mixture 20-30 minutes in the refrigerator. Or put in the freezer to chill while the evaporated milk is being beaten.
11. Beat evaporated milk until stiff.
12. Add sugar and vanilla.
13. Fold gelatin mixture into the whipped milk mixture.
14. Pour over graham cracker crust in 9 x 13 pan.
15. Chill for 3 to 4 hours.
16. Notes: 1) Cooking time is chilling time. 2) You can use whatever flavor of jello you like. We just happen to prefer the strawberry, although lemon is yummy, too.
