Gombo Aux Crabes - Crab Gumbo |

Richly delicious, this flavorful soup comes from the Creole chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
1/4 cup ham, diced |
1/2 garlic clove |
2 cups okra, sliced |
2 tablespoons butter |
1/2 bay leaf |
1/8 teaspoon thyme |
1/2 teaspoon salt |
6 peppercorns |
6 tomatoes, diced (canned is fine) |
1 cup water, hot |
1/2 lb crabmeat, flaked |
cooked rice |
Directions:
1. Fry ham, garlic and okra in butter. 2. When well coated with butter, but not brown, add next six ingredients. 3. Cook 20 minutes, add crab and cook for an additional 15 minutes. 4. Serve on mounds of hot rice. |
