I got this recipe from my mother several years ago. Not sure where she got it but I can tell you this is the most decadently delicious candy you can possibly imagine. It is always a part of our Christmas baking. I like to put them in petit four papers. Ingredients:
1 pound confectioners' sugar |
1 1/2 cups chunky peanut butter |
1 cup butter |
2 cups flaked coconut |
1 cup chopped walnuts |
1 cup graham cracker crumbs |
1 1/2 pounds semisweet chocolate chips |
Directions:
1. Mix sugar, peanut butter, butter, coconut, walnuts, and graham cracker crumbs in a large bowl using hands until thoroughly blended. Roll 1 inch balls and place on a baking sheet. Chill for 1 hour in the refrigerator. 2. Melt the chocolate in a microwave-safe glass or ceramic bowl in 30 second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip peanut butter balls into the chocolate until they are completely coated. Allow chocolate to harden before serving. |
