Goldilocks Potatoes

Creamy,cheesey and easy potato side dish.
Ingredients:
2 lbs. yukon gold potatoes or other potatoes,peeled and chopped
1/4 tsp salt
1/8 tsp black pepper
milk(optional)
1/2 c whipping cream
1/3 c shredded american cheese (3 oz)
Directions:
1. In large saucepan,cook potatoes,covered,in enough boiling water to cover for about 15 to 20 mins or till tender;drain. Mash with masher or beat with chilled beaters of electric mixer on low speed. Add salt and pepper if necessary;add small amt. of milk to make potatoes desired consistancy.
2. Preheat oven to 350 degrees. Grease 4 10 oz. individual -size baking dishes or 1 qt. baking dish . Spoon potato mixture into prepared baking dishes.
3. In a chilled medium mixing bowl,beat whipping cream with chilled beaters of mixer on med. speed until soft peaks form. Fold in shredded cheese and spoon evenly over potatoes.
4. Bake 15-20 mins or till light brown.
