Golden Vegetable Casserole With Sage Dumplings |

Greatness in a casserole. Very comforting, very tasty and bold on taste. Enjoy Ingredients:
1 white onion sliced |
2 cloves garlic crushed |
1 carrot scrubbed and chopped |
1 medium parsnip scrubbed and cubed |
1 small rutabaga peeled and cubed |
1 small turnip peeled and cubed |
1 artichoke well scrubbed and quartered |
4 ounces chestnut mushrooms halved |
1 teaspoon dried thyme |
1 tablespoon fresh parsley chopped |
1-1/2 pints vegetable stock |
1 teaspoon yeast extract |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |

4 ounces self rising whole wheat flour |
2 ounces vegetable suet |
1/2 teaspoon salt |
1/2 teaspoon dried sage |
1 teaspoon dried mustard |
2 tablespoons milk |
Directions:
1. Sauté onion, garlic, carrots, parsnip, rutabaga, turnip and artichoke with herbs for 10 minutes. 2. Stir occasionally to prevent sticking then add mushrooms and cook 5 minutes. 3. Add stock, yeast, salt and pepper then simmer gently for 30 minutes. 4. Make dumplings by mixing flour, mustard powder, salt, herbs and vegetable suet in a bowl. 5. Add milk and mix to make a soft dough then form into small dumplings and drop into casserole. 6. Simmer another 15 minutes or until dumplings are puffed up. |
