1 cup raw long grain rice |
1 tbs oil or butter |
2 cups water or chicken stock |
few stands of saffron ( nice but not necessary ) |
1 tsp salt |
1/2 cup soft raisins or softened dried cranberries |
1/4 cup slivered almonds |
salt and pepper as desired. |
Directions:
1. Heat raw rice in pan with oil or butter stirring constantly a few minutes to color rice a pale golden. 2. Add the water or broth along with saffron and a tsp salt and bring mixture to a boil. 3. Cover and simmer until rice has absorbed the liquid. 4. Remove from heat and let sit 5 minutes. 5. Add nuts and raisins and stir and fluff with a fork ( not spoon ) and season to taste. |
