Golden Pumpkin Meringue Pie |

This is another recipe clipping that Mom collected. I am sure there is one here on Zaar, but I just want to put it here for safe keeping. These are all cut out of magazines and I have no idea which magazine or paper they came from. Some are even newspaper clippings. Ingredients:
3 eggs, seoarated |
16 ounces pumpkin |
4 1/4 cups sugar |
1 1/2 teaspoons pumpkin pie spice |
1/2 teaspoon salt |
1 2/3 cups evaporated milk |
9 inches pie shells |
1/8 teaspoon salt |
7 ounces kraft marshmallow creme |
Directions:
1. Beat egg yolks slightly. 2. Add pumpkin milk, sugar, spice, and salt. 3. Mix well. 4. pour into pie shell and bake at 425* for 15 min. 5. reduce temprature to 350* and bake for 45 min or until pie is set. 6. Cool. 7. Beat egg whites and salt until soft peaks form. 8. Gradually add marshmallor creme. 9. Beat until stiff peaks form. 10. Spread meringue on top of pie, sealing to edgeof pie. 11. Bake at 350* for 15 min or until lightly browned. |
