An old family recipe from my SIL. I like to serve this with applesauce. Makes ALOT!!!! Ingredients:
2 whole eggs |
3 tablespoons flour |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1 cup apple, coarsely shredded |
2 1/2 cups about 1 lb. russet potatoes, coarsely shredded |
1 tablespoon finely chopped green onion |
1/2 cup shredded cheddar cheese |

Directions:
1. Beat eggs. Stir in flour, salt and pepper. 2. Stir in apples*, potatoes*, green onions and cheese. 3. Heat 1/2 inch of oil in a skillet over medium-high heat. 4. Drop potato mixture by level tablespoonfuls into hot oil. Flatten into 1-1/2-inch rounds. 5. Pan-fry for 3 to 4 minutes per side, or until golden and crispy. 6. Drain on paper towels. 7. Add more oil as needed. 8. Serve warm with syrup or applesauce. 9. *TIP: Shredded apples and potatoes can be placed in a bowl of water with 1-1/2 teaspoon lemon juice to prevent darkening. Drain thoroughly before using. |
