Ingredients:
1 1/2 cups all-purpose flour |
1 cup sugar |
3/4 teaspoon salt |
1/2 teaspoon baking soda |
1/8 teaspoon ground cinnamon |
2 eggs |
1/2 cup vegetable oil |
1/2 teaspoon vanilla extract |
1 (15 1/4 ounce) can sliced peaches, drained and finely chopped |
Directions:
1. In a bowl, combine the dry ingredients. 2. In another bowl, combine the eggs, oil and vanilla; Stir into dry ingrediants just until moistened (batter will be thick). 3. Fold in peaches. 4. Fill paper-lined muffin cups two-thirds full. 5. Bake at 350* for 25-30 minutes or until toothpick comes out clean. 6. Cool for 5 minutes before removing from pan to a wire rack. |
