a wonderful change from french onion soup Ingredients:
1/4 cup butter |
2 thinly sliced onions |
3/4 tsp thyme |
fresh ground pepper to taste |
1 tbs. flour 2 cups water |
1/2 cup dry wine (changing wines changes flavor) |
2 tbs. soy sauce |
1 tbs. honey |
1/4 heaping cup shredded swiss cheese |
Directions:
1. melt butter in a sauce pan over medium heat 2. add onions thyme and season with pepper 3. cover and lower heat to low and cook very slowly till onions are translucent,stirring occasionally,about 20-25 minutes 4. cook unti they are brown and well carmilized 5. add flour to onions and stir until browned( don't burn) scraping bottom for about 5 minutes 6. add water,wine,soy sauce and honey. 7. bring to a boil and reduce heat to a very slow simmer and cook till slightly thickened, about 1 1/2 hours 8. add swiss cheese ,stir until melted and serve with crusty bread |
