Wonderful,refreshing orange and lemon bars. Nice dessert for a barbecue or anytime. This is a Rachael Ray recipe. Ingredients:
2 sticks(8oz) unsalted butter,softened |
2c plus 2 tbs. flour |
1/2c confectioners sugar,plus more for dusting |
11/2tsp grated lemon peel |
1/2tsp grated orange peel |
2c sugar |
4 lg eggs |
1/2c fresh lemon juice |
1/4c fresh orange juice |
1tsp baking powder |
Directions:
1. Prehat oven to 350 Using electric mixer,combine the butter,2c flour,and the confectioners sugar unti consistency of coarse sand. Stir in 1/2tsp lemon peel and the orange peel.Press mixture into bottom of 9x13 baking pan. Bake till golden,about 25 mins. 2. Meanwhile,using electric mixer,combine sugar,eggs,lemon juice,orange juice,remainin 1tsp lemon peel,remaining 2Tbs flour and baking powder and mix 11/2 mins. Pour the filling into the crust and bake till top is golden,about 40 mins. Let cool completely. Cut into bars and dust with confectioners sugar. |
