This is a great snack ... I got the recipe from TOH Ingredients:
1/2 cup shortening |
3/4 cup sugar |
2 eggs |
1 1/2 cups all-purpose flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon salt |
3/4 cup milk |
1/2 cup confectioners' sugar |
2 teaspoons grated lemon peel |
2 -3 tablespoons lemon juice |
Directions:
1. In a large mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. 2. Pour into a greased 9-in. x 5-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted near the center comes out clean. Place pan on a wire rack. Check around 45-50 min. 3. Combine the glaze ingredients; immediately pour over warm bread. Cool completely before removing from pan. |
