Golden Glazed Sweet Potatoes or Yams |

Adapted from a newspaper clipping. Substitute 2 large cans of Yams for sweet potatoes if you wish . Ingredients:
8 medium sizes sweet potatoes |
1/4 cup brown sugar |
1/2 cup light corn syrup |
1/2 lemon lemon, zest of |
1 tablespoon lemon juice |
Directions:
1. Scrub raw sweet potatoes and Cook in 1 of boiling salted water, covered, for 25-30 minutes or until tender ( skip step for canned yams). Cool and remove skins.Cut into large chunks. 2. Combine butter, brown sugar, corn syrup, lemon juice and grated rind into a large frying pan. Bring to boiling. Boil 5 minutes, stirring ( careful not to burn). 3. Add sweet potatoes ( or Yams). 4. Cook over low heat, basting often, 10-15 minutes or until potatoes are piping hot and well glazed. |
