1 cup flour |
1 cup yellow cornmeal |
1/4 teaspoon chili powder |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 cup peanut oil or 1 cup canola oil |
24 shucked oysters, drained |
1/2 cup mayonnaise |
1 tablespoon lemon juice |
2 teaspoons worcestershire sauce |
Directions:
1. Combine flour, cornmeal, chili powder, salt and pepper. Set aside. 2. Heat oil in cast iron skillet until it reaches 350ยบ or flour bubbles immediately upon being sprinkled in it. 3. Dredge oysters in flour mixture, shake off excess flour and fry in oil until golden brown, about 2 minutes. Transfer to paper towels. |
