GOLDEN CURRANT PILAF WITH CINNAMON This recipe came from an estate sale. I obtained it when I purchased the family collection from the Harrison Estate in Crandall, Texas in 1999. Ingredients:
3/4 cup chopped white onion |
2 teaspoons olive oil |
1 cup uncooked long grain white rice |
2 cups homemade chicken broth |
1/2 cup dried currants |
1 teaspoon ground turmeric |
1/2 teaspoon ground cinnamon |
1/2 teaspoon salt |
1/4 cup packed chopped fresh parsley |
Directions:
1. Sauté onion in oil in a medium saucepan over medium low heat until tender about 5 minutes. 2. Add rice then cook 1 minute and stir in broth, currants, turmeric, cinnamon and salt. 3. Bring to a boil then reduce heat and cover then simmer 20 minutes. 4. Remove from heat then let stand covered for 5 minutes and stir in parsley. |
