Ingredients:
1 1/2 cups cornmeal |
1/4 cup all-purpose flour |
2 teaspoons baking powder |
1/4 teaspoon baking soda |
1 teaspoon salt |
1 cup buttermilk |
2 eggs, beaten |
2 tablespoons shortening, melted |
Directions:
1. Combine cornmeal, flour, baking powder, soda, and salt; mix well. Add buttermilk and eggs, stirring just until dry ingredients are moistened. Stir shortening into batter. 2. Heat well-greased cast-iron corn stick pans in a 400° oven for 3 minutes or until very hot. Spoon batter into pans, filling two-thirds full. Bake at 400° for 25 minutes or until lightly browned. |
