I've been making this for about 25 years now & my kids ADORED it. My 30 yr old son called me last nite asking me to email it to him so he could cook it for his girlfriend, so I figured I would submit it. It has a wonderful flavor,hope ya'll enjoy it. Ingredients:
set out a large saucepot with a tight fitting lid . |
cook about 4 chicken breasts (you can cook them any way you want. i would broil or grill them,gives the chowder more flavor ) |
chop up enough cooked chicken to make 2 cups coursely chopped chicken |
drain and reserve the liquid of 1 (12 oz.) can of whole kernel corn |
clean and thinly slice and set aside 3 medium onions |
fry (save the grease) and crumble about 6 slices of bacon |
in bacon grease, fry onions until they are tender then remove from grease and set aside,still saving grease. |
Directions:
1. Add about 3 T of butter to the grease,melt that then stir in 3 T of flour, 1 teaspoon of salt & 1/4 teaspoon of pepper. 2. Heat until it bubbles, then remove from heat & add reserved corn liquid,stirring constantly,then add 6 cups milk . Stir in onions, corn, bacon and chicken pieces . Cover and return to heat for 15 minutes or til chicken is heated thru. DO NOT BOIL . 3. I also like to make some biscuits to dip in it,too ! YUM ! |
