Golden Carrot Cookies With Orange Frosting |

This is a nice cookie. The first time I had this, I wasn't sure if I would like them, but let me tell you, they are addicting and the orange frosting is such an incredible addition. Enjoy Ingredients:
1/2 cup shortening |
1/2 cup butter |
3/4 cup granulated sugar |
2 eggs |
1 cup mashed cooked carrots |
2 cups all purpose flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
3/4 cup shredded coconut |
frosting |
2-1/2 tablespoons butter softened |
1-1/2 cups sifted confectioners' sugar |
1-1/2 tablespoons orange juice |
2 teaspoons grated orange rind |
Directions:
1. Preheat oven to 400 then mix shortening, butter, sugar, eggs and carrots. 2. Blend flour, baking powder and salt into shortening mixture then stir in coconut. 3. Drop dough by teaspoonfuls about 2 apart on lightly greased baking sheet. 4. Bake 10 minutes or until no imprint remains when touched lightly. 5. Frost cooled cookies with icing after completely cooled. 6. To make frosting blend butter and sugar together then stir in orange juice and rind until smooth. |
